Night Merchant

Night Merchant Distillery at Bimbadgen

Made in the still of night, Night Merchant Distillery brings a bold collection of small-batch spirits to the heart of Hunter Valley Wine Country.

Located within the Bimbadgen Cellar Door, Night Merchant was born when Bimbadgen’s winemaking team transferred their scientific talents from the winery to the still. The result is a contemporary range of handcrafted gins, vodkas, rums and agave spirits, distilled onsite in Pokolbin.

Spirit Tasting ExperiencesExplore the distinctive character of Night Merchant with a guided tasting flight featuring three Hunter Valley-distilled spirits. Each experience is hosted by the knowledgeable Cellar Door team and offers an introduction to the flavours, ingredients and craft behind every pour.
