Waverley Estate Aged Wines, established in 1989 and set on 170 acres, is the only aged wine specialist in the Hunter Valley, New South Wales, Australia. The land was originally part of Rothbury estate and some of the vines are more than fifty years old. The philosophy of the Estate is to achieve low yields of fruit – low yields create intensely flavoured grapes which attain quality but small quantity.
Since 1989 Waverley Estate wines have been superbly crafted. Combining and blending this passion with sound viticultural practices, we have continually produced distinguished Hunter wines made from grapes grown on the Estate.
From the first vintage in 1989 the wines were placed in storage for ten years and allowed to slumber and mature within a Temperature – Controlled Environment to gain bottle experience.
The cellar door is open for friendly and informative wine tastings of the Estate’s Aged and Museum Hunter Wines by experienced staff members. Warm and cosy in winter yet cool and comfortable in summer you will be able to experience the rare opportunity and the subtleties of aged wines in a vertical tasting – sample wines of the same variety, but at different stages of development or try a horizontal tasting of different wines but the same age.
The romance of Waverley Estate Aged Wines is not only the ability for both vertical and horizontal tasting of the wine but to do so with selected foods which are enhanced by the appropriate wines. Indulge in the sip, nibble and chat tasting which is an opportunity to share a range of tastes that are broad, distinctive and unforgettable, accompanied by an informal and relaxed fare of delicious platters of local fresh produce.

Wines Produced: The Estate offers an extensive range of Semillon, Chardonnay, Shiraz and Cabernet Sauvignon wines sourced strictly from our vineyards only.
Wine Varieties: Semillon, Chardonnay, Sparkling Chardonnay, Aged Cuvee, Shiraz, Sparkling Shiraz, Cabernet Sauvignon and two very special Vintage Ports, one using Shiraz the other Cabernet Sauvignon.
Awards: Waverley Estate Aged Wines have won over 250 awards and many are trophy winners. The 1993 Semillon was awarded the best Semillon in Australia.

27th April - Twilight Tasting in the Vines
Back by popular demand, we will be offering a free Twilight Tasting on Saturday 27th April. Arrive at 5pm for sparkling wine and canapés in the Cellar Door before we wander down to the vineyard for a tasting amongst the vines as the sun sets over the Brokenback. 02 4998 6750
