Algerian born Robert Molines is widely regarded as one of the great hunter valley chefs. Over 35 years in the restaurant business has given him the qualifications and the background that has made his food legendary.
Robert grew up in Beausoliel, in the south of France, and his childhood exposed him to a mix of French, Italian and Mediterranean cultures.
Her completed his culinary education at the Catering Institute of Menton and served his apprenticeship at some of the top hotels of Monte Carlo, Nice and Cannes, before arriving in Australia in 1968.
He gained experience in many Sydney restaurants such as Eliza's and Beppi's.
Robert and his wife Sally moved to the Hunter in 1973, creating the sucessful Happy Valley Restaurant and then the Pokolbin Cellar Restaurant, before opening the multi-award winning Robert's at Peppertree.
Now, Robert and Sally are proud propietors of Bistro Molines at Tallavera Grove.
This French Bistro is set in the gorgeous surrounds of the picturesque Tallavera Grove property in Mount View.
This new restaurant (only 2 years old) is fast becoming their most popular yet, as Robert returns to his roots and offers a large, everchanging menu of Provincial French cuisine inspired by the freshest local produce.
The open set dining room is lovingly decorated by Sally with fresh flowers, colourful fruit and antique pictures and ornaments. However, the place to dine is on the verandah over looking the mount view valley and vineyards or in the wisteria covered courtyard- heaven on earth!
In September 2009, Bistro Molines was awarded a Sydney Morning Herald Good Food Guide Chefs Hat with rave reviews from editor Simon Thompson......
"I like what his humilty stands for: a rustic, yet sophisticated, honesty and an unpretentious, relaxed pace with a sprinkle of enchantment.......this culinary craftsmen is recrowned".
Wanting to expand on the dream, Robert and Sally have also opened a more relaxed and casual style dining venue at Briar Ridge Vineyard, called Briar Grillade (French for Grill). The menu is based around simple and flavoursome housemade food which is prepared daily by Chef Sam Alexander.
The two restaurants compliment each other and bring two wonderful dining options to the Mount View region.
